The answer is sort of the same as “how do you people can live to 100 years old if you haven’t lived that long?” We can see stars (or people) at different stages of their life, and we can put together a picture of how stars (or people) advance from one stage to the next. Especially when some stars “die”, they blow up in an event we call a supernova. We can often tell how old the star was that caused the supernova, so that is one way we can tell how old stars get.
